Tony's Table: Stuffed Artichokes
NEW YORK (CBS 2) - They sound intimidating to prepare, but Tony Tantillo's recipe makes stuffed artichokes easy to make for your family or a special occasion.
Stuffed Artichokes
4 large artichokes
1 cup seasoned Italian breadcrumbs
1/2 cup Parmesan cheese
6 cloves finely chopped garlic
6 oz. finely chopped Italian parsley
1 cup olive oil
1/4 cup chicken stock
1 sprig rosemary
I. Prepare stuffing:
In a bowl, mix breadcrumbs, parmesan cheese, 4 cloves of garlic, and Italian parsley.
II. Prepare artichokes:
Cut off top inch of artichokes and enough of bottoms to allow them to stay vertical.
Use kitchen shears to cut tips off leaves.
Gently open up the middles of the artichokes, then generously drizzle olive oil inside them.
Add stuffing to choke, filling to the point of overflowing.
Place 1/4 inch of water to a pot, then add chicken stock and bring to a boil.
Add rosemary and remaining garlic to pot, then add artichokes and lower heat.
Cover and allow to steam for 45 minutes to an hour.
Be sure to check on liquid level in pot. Add water if necessary.
III. Serve:
Artichokes are ready when all leaves are soft and cooked-through.
Remove to plate; top with liquid from pot.
