Leslie Bonci's Recipes: Super Bowl Snacks

UPMC Dietician Leslie Bonci stopped by PTL today to show off some great recipes for your Super Bowl party!

Spinach Dip

  • 1 10 oz package frozen chopped spinach, thawed, drained, squeeze out excess water
  • 2 green onions, finely chopped
  • 2 cups of plain Greek yogurt
  • 1/3 cup reduced fat mayonnaise
  • 1 packet Knorr's vegetable soup mix

Combine all ingredients in a blender or food processor.
Serve with cut up vegetables or crackers

Black Bean Dip

  • 1, 15 ounce can black beans, drained, rinsed well
  • ½ small jar of salsa
  • ½ cup plain Greek yogurt
  • 1 packet taco seasoning mix and/or chili powder, cayenne, cumin to taste

Combine all ingredients in a blender or mash beans with a fork and mix in all the other ingredients.
Serve with tortilla chips

Chicken Caesar Salad Bites

Mix together:

  • 1 pound ground chicken
  • 2 Tablespoons Caesar dressing
  • 1/3 cup grated Parmesan cheese
  • ¼ cup breadcrumbs
  • 1 teaspoon lemon zest.

Form into small balls- size of ping pong balls or small ovals, broil or use a grill pan.

When cool, wrap in romaine lettuce leaves and serve

Cranberry Pistachio Bites

  • 1 cup chopped dates
  • ½ cup honey
  • 1 Tablespoon ground flaxseed (meal)
  • ½ teaspoon cinnamon
  • pinch of salt
  • 1-1/2 cups oats, dry
  • 1 cup shelled pistachios
  • 1 cup dried cranberries
  • ½ cup white chocolate chips

Combine dates, honey, flaxseed meal, salt, and cinnamon in a blender and blend until smooth.

Transfer this mixture to a large bowl and add oats, pistachios and cranberries. Stir well and put in the freezer for about 15 minutes to make it easier to roll

Use a spoon and roll into 1 inch diameter balls or ovals, or press into a pan and cut into bars.
