Tony's Table: Shrimp with Peppers and Paprika

Shrimp with Peppers and Paprika
1/2 lb. shrimp, peeled & de-veined
2 red bell peppers
1 green bell pepper
1 yellow bell pepper
1 clove garlic
1/4 cup olive oil
1 cup white rice
1 cup enriched flour
2 oz. paprika
Salt & pepper to taste
I. Prepare shrimp
Mix flour, paprika, salt, and pepper. Spread evenly onto a plate.
Dip shrimp into flour mixture until covered evenly on all sides.
Heat olive oil in pan, reserving 2-3 tablespoons.
Saute flour-coated shrimp until golden brown all over.
Remove shrimp then drain most of the oil, leaving enough to coat the pan.
Add sliced peppers and chopped garlic, along with reserved olive oil.
Saute until peppers are translucent and soft.
Return shrimp to pan, and cook for 2-3 minutes.
II. Prepare rice
Boil or steam rice, whichever your preference.
III. Plate
Add rice to plate, then top with shrimp and peppers, and serve.
