Tony's Table: Gnocchi With Pesto
What better way to celebrate Columbus Day than by trying a classic Italian dish. CBS 2's Tony Tantillo demonstrates how you can make Gnocchi with Pesto.

Gnocchi with Pesto
- 2 Cups Basil Leaves
- 1 Cup Olive Oil
- 4 Garlic Cloves
- 1/4 Cup Walnuts
- 1/2 lb. Gnocchi
- 4 oz. Ricota Salata
- 4 oz. Pecorino Romano
I. Prepare pesto sauce:
Blend basil, olive oil, garlic, and walnuts until consistency is medium to thick.
Add more olive oil if mixture is too thick.
II. Prepare gnocchi:
Place gnocchi into pot of salted, boiling water.
Cook until they float. Remove from heat.
III. Combine elements:
Pour pesto into pan on medium heat.
Add gnocchi and saute for 3 minutes.
IV. Serve:
Garnish with ricotta salata and Pecorino Romano cheeses.
