Recipe: Natalie's Grilled Chicken Tacos

Ingredients:

1 pound chicken (breasts or thighs)
½ teaspoon salt
½ teaspoon pepper
2 TB olive oil
2 teaspoons ground cumin
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon chili powder
1 cup grape tomatoes, chopped
1 jalapeño, chopped
¼ cup fresh cilantro, chopped
1 lime, cut into wedges
corn or flour tortillas
4 ounces goat cheese (or queso fresco)
1 avocado, sliced
extra limes for garnish
1 cup sour cream
1 packet of taco seasoning

Directions:

Pre-heat grill.

Rub chicken with olive oil and season with salt and pepper.  Grill chicken.

While chicken is cooking, make the yummy salsa!  In a small bowl, combine tomatoes, jalapeños, cilantro, salt, pepper, lime juice.  Set aside.

Cut grilled chicken into one-inch pieces.

In a skillet, combine cumin, paprika, garlic powder, chili, and a splash of water and turn on medium heat.  Add chicken, stir and heat lightly, being careful not to over-cook the chicken.

In a small bowl, combine taco seasoning and sour cream.

Assemble the taco!  Chicken, salsa, avocado, goat cheese, a squeeze of lime, and top with the sour cream sauce.
