Rania's Recipes: Happy Face Burgers, Just Peachy Zuku Pops

Rania Harris shows off recipes every Wednesday on Pittsburgh Today Live. This week, Rania shows off two recipes for a dinner party with a children's theme!

Happy Face Burgers

1 pound lean ground beef
½ cup dry bread crumbs
1 package onion soup mix
½ cup ketchup
8 pickle slices
4 olives
1 tomato - sliced
2 cups lettuce - shredded
Mustard (using a squeeze bottle)
4 hamburger buns

Directions:

Combine ground beef with breadcrumbs, soup mix and ketchup in large bowl.

Shape into four patties.

Grill over medium high heat until cooked through.

Grill the buns.

Place half of each bun on individual plates and top with burgers to make open-faced sandwiches.

Make face, using sliced pickles for eyes, olive for nose, 1/2 tomato slice for mouth, shredded lettuce for hair, and mustard for eyebrows and pupils.

Just Peachy Zuku Pops

1-1/4 cup (7 oz.) peeled, diced peaches (from 1-2 peaches)
½ cup peach nectar (store bought)
3 tablespoons plain fat-free yogurt
1-1/2 teaspoons agave nectar
1-1/2 teaspoons fresh lime juice

DIRECTIONS:

Make the Peach Base: Combine the ingredients in a blender and puree until smooth.

Assemble the Pops: Insert sticks into the pop maker molds and pour peach base until you reach the fill line. Let freeze completely, then remove pops with the Super Tool and enjoy! Repeat with remaining pops.

Makes: 6 pops
