Tony's Table: Chicken Scallopini
NEW YORK (CBS 2) - Most people may be familiar with Veal Scallopini, but this week Tony Tantillo changes this recipe to chicken. A great, tasty dish that will be ready for your table in about 30 minutes!
Chicken Scallopini
3 chicken breasts
1 cup all-purpose flour
1/2 lb. cremini mushrooms, sliced thin
1/2 cup butter
1/2 cup olive oil
1 cup chicken broth
2 tablespoons capers
1 Meyer lemon
1/2 cup Italian parsley
Prepare chicken:
- Pound chicken breasts to desired thickness.
- Spread flour on plate, sprinkle with salt and pepper.
- Dip chicken in flour mixture until covered on all sides.
- Heat olive oil and butter in pan, then add chicken.
- Saute until browned all over, roughly two minutes per side.
- Add sliced mushrooms, then drain excess oil from pan.
- Add chicken stock, then the juice from one lemon, then add lemon slices to pan.
- Add capers and allow to cook for about 10 minutes.
- Top with Italian parsley to taste, and serve.
