Pop Up Restaurants Thrive In 72 Hours
NEW YORK (CBSNewYork) - The life of a New York City restaurant can be a short one, but a new fad in the restaurant business has eateries open, serve and close all within three days.
It's called the "pop up restaurant" and the trend has so far been successful by whispers and word-of-mouth. These 72-hour restaurants are generally sold-out before the decor is on the table.
Alan Philips, founder of The Feast, is soon breaking out of NYC and into cities across America.
The secret to their success is by keeping the start-up costs to their pop up restaurant low by finding the right under-used spaces and taking over.
This will be Chef Seamus Mullen's first time working in a pop up restaurant, but he doesn't seem too worried.
"It's going to be a challenge, but we'll get it done... it'll be good ," said Mullen.
Mullen is most well-known for his appearance on the Food Channel's Next Iron Chef, but tonight, customers will get a taste of his interpretation of cuisine from the 20s.
