Mama V's Chicken Cacciatore
Here's this week's Mama V's recipe: Chicken Cacciatore!
Ingredients:
Chicken: 4 breasts or whatever pieces you prefer, like wings legs or thighs.
2 cloves garlic
1 15-ounce can of tomato sauce
1 teaspoon marjoram
1 teaspoon thyme
1 large green pepper
1 large red pepper
1 cup cooking sherry
Salt
Pepper
Olive oil
Directions:
Cut up the chicken breast into quarters or smaller pieces if you prefer. Add salt and pepper to taste.
In a big skillet, brown the chicken in olive oil in with two cloves of crushed garlic. Brown all sides.
Remove from heat. Add the can of tomato sauce. Add the sliced red and green pepper. Add thyme and marjoram. Add cooking sherry. Stir all ingredients together.
Return to stove top, cover and cook at least one hour or until chicken is cooked thoroughly. Use low heat and let simmer while cooking. Remove from heat, enjoy.
It's also nice to serve this with rice, as the rice will soak up the cacciatore sauce.
