Chris Stanford's Cranberry Glazed Sweet Potato Puffs

Ingredients
3 large sweet potatoes
¼ cup butter or margarine, softened
3 tablespoons brown sugar
2 eggs, beaten
½ teaspoon pumpkin pie spice
½ cup canned jellied cranberry sauce
¼ cup brown sugar
1 tablespoon lemon juice
Directions:
Heat oven to 400°F.
Peel and cut sweet potatoes into 1-inch cubes. Add sweet potatoes to a large pot and add water to cover.
Bring water to a boil and boil sweet potatoes until tender. About 20 minutes.
Drain potatoes and return to pot. Mash with a potato masher until smooth.
Stir in butter, brown sugar and eggs and beat with a hand mixer until fluffy.
Scoop ½ cupfuls of the potato mixture onto a cookie sheet and bake about 20 minutes, until puffs are set.
While the puffs are baking, combine cranberry sauce, brown sugar and lemon juice in a small saucepan.
Cook over medium heat, stirring, until smooth and combined. Remove from heat.
Remove puffs from oven and brush with cranberry glaze before serving.
