Diva Chef Recipe: Organic Red Quinoa Salad

Diva Chef Elise Wims stopped by the Lynne Hayes-Freeland Show to show off a great and healthy salad dish!

Organic Red Quinoa, Salad with Kale, Apples and Sweet Potatoes

1 cups of Organic Red Quinoa
2 cup vegetable stock
1 large sweet potato, peeled and diced
1 medium granny smith apple diced skin on.
1/4 cup red onion, diced
2 cups of Kale, chiffonade
1/8 cup sliced almonds
Fresh parsley, chopped
2 lemon
Extra Virgin olive oil

Dice and bake sweet potato at 350 degrees until fork tender.

In a saute pan, toast Quinoa in 3Tbsp of olive oil for 1-2 minutes.  Add stock and cover with a lid reducing heat until grains are translucent and the germ has spiraled out from each grain.

In a large bowl, combine diced apple, onion, sliced almonds, and cooked and cooled sweet potatoes, cool Quinoa and toss with vegetables, juice of 2 lemons, and and 1 Tbsp of olive oil. Top with Parsley! Enjoy!
