Bite Of Minnesota: Sparkling Rhubarb Soda
I've been making my own sparkling drinks for quite some time now. Some concoctions use champagne as the "sparkle" while others call for sparkling water. I stock cans of it in my kitchen and add fruit juice like cranberry, pomegranate, and pineapple to sweeten it up a little bit.
Since rhubarb is in season, I thought it would be fun to make rhubarb simple syrup and stir it into some sparkling water. It was extremely easy to do and calls for three ingredients: rhubarb, sugar, & water. Make it for yourself and add to sparkling water. Garnish with a few lemon or lime wedges and you'll have yourself a homemade soda.
Sparkling Rhubarb Soda
1 cup rhubarb, chopped
1 cup sugar
1 cup water
Add all ingredients to a small saucepan and bring to a boil. Once boiling, reduce heat to low and let lightly simmer for 20 minutes, or until rhubarb falls apart. Strain in a fine mesh strainer and let cool.
Once cool, stir with sparkling water for a refreshing non-alcoholic drink or add vodka and cranberry juice to make a fun summer martini.
