Apple Hill Recipes
Aebleskiver

3 eggs, separated
3 tbsp sugar
1 ½ tsp salt
2 C sour milk or buttermilk
2 C flour
1 tsp baking soda
1 tsp baking powder
Applesauce/stewed apple slices

Beat egg yolks until light
Add sugar, salt and milk
Add flour sifted with baking powder and soda
Stiffly beat egg whites and fold into mixture
Heat an Aebleskiver pan and place a small amount of shortening or oil in each hole
Fill each depression 2/3 full of batter
Place 1 tsp applesauce or piece of stewed apple on top of batter and cover apples with a little of the batter
Cook until bubby, turning carefully with a fork and finish cooking other side
Remove from pan and serve with butter, maple syrup, jam, brown sugar or confectioners sugar

Serves: 4-6 people
Prep time: 20 minutes
Cook time: 45 minutes

Ingredients
For the filling:
2 tablespoons olive oil
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1.5 lbs (700g) ground beef
2 tablespoons flour
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup beef stock
1 cup frozen peas
2 teaspoons fresh thyme (or 1 teaspoon dried)
Salt and pepper to taste

For the topping:
2.5 lbs (1.1kg) potatoes, peeled and cut into chunks
4 tablespoons butter
½ cup milk or cream
Salt and pepper to taste
1 cup shredded cheddar cheese (optional)

Instructions

Make the mashed potatoes: Boil the potatoes in salted water for 15-20 minutes until tender. Drain, then mash with butter, milk, salt, and pepper until smooth. Set aside.

Cook the filling: Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery. Cook for 5-7 minutes until softened.

Brown the beef: Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.

Build flavor: Stir in garlic, tomato paste, Worcestershire sauce, and thyme. Cook for 1 minute. Add flour and incorporate.

Simmer: Add beef stock and mix into the vegetable and flour mixture. Bring to a simmer. Cook for 10-15 minutes until the sauce thickens. Stir in peas and season with salt and pepper.

Assemble: Preheat oven to 400°F (200°C). Transfer the meat mixture to a baking dish. Spread mashed potatoes evenly over the top. Use a fork to create texture on the surface. Sprinkle with cheese if using.

Bake: Bake for 20-25 minutes until the top is golden and the filling is bubbling around the edges.

Rest and serve: Let stand for 5 minutes before serving.

Tip: For extra crispy topping, place under the broiler for 2-3 minutes at the end!

Ingredients (Serves 10)

2 Sticks (8 oz.) Butter

1 1/4 C (8 oz.) Classic Hot Chocolate Mix

2 1/4 Cups Powdered Sugar – sifted

5 Egg Yolks

5 Eggs

1 Cup Pastry Flour – sifted

Instructions

Preheat oven to 350° F

Melt the chocolate and butter together over a double boiler. Remove from the heat.

Mix in the sifted powdered sugar watching for lumps.

Add the yolks and eggs. Mix thoroughly.

Add the sifted flour and mix until just combined with no lumps.

Spray 4 oz. ramekins or a muffin tin with nonstick spray. Fill the containers with the batter using a spoon or scoop.

Bake at 350° F for 6 minutes. Rotate and bake for another 6 minutes. Remove from the oven and serve.

Beef and Tomato Stew

1 Tbsp olive oil
2 lbs cubed beef
1 (15 oz) can stewed tomatoes
1 (6 oz) can tomato paste
4 cups beef broth
1 tablespoon Worcestershire sauce
1 medium onion chopped
3 large carrots sliced
3 ribs celery chopped
1 cup fresh or frozen peas
1 lb baby potatoes sliced in half
2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh thyme or 1 teaspoon dried
2 teaspoons fresh rosemary or 1/2 teaspoon dried
1 bay leaf

Instructions

To make on your Stove Top:

Drizzle olive oil in a large dutch oven or pot on medium high heat until oil is hot and glistening. Add cubed beef and sear meat on all sides, about 5 minutes.

Add in the rest of the ingredients and bring to a boil. Cover and simmer for about 2 to 3 hours, until meat and veggies are tender. Serve and enjoy!
