Japanese Curry 
Recipe can feed up to 4-5 people
Ingredients:

- 1 medium white onion diced medium size

- 1-2 medium carrot cut medium size

- 2 bunches celery cut medium size

- 1 russet potato diced

- 4 cloves of garlic minced

- 1 ripe banana smashed in a bowl 

- 2 bay leaf

- 4 tablespoon of butter (2tbsp for cooking, 2tbsp for finishing)

- dash of turmeric, cinnamon, garam masala (all optional)

- 2 packs of Golden Curry mix (mild or medium hot)

- 1 pack 32oz chicken stock (or veg. stock)

- 1 cup of water

Method:

1. In a medium size pot on medium heat add the butter, onion, celery, carrot. 

2. Stir well, add a dash a s&p and sweat until the onions are translucent. 

3. Once it is translucent, lower the heat and add the spices and the bay leaves.

4. Stir well and sweat until fragrant. 

5. Add all the liquid, banana, and potatoes. 

6. Bring the pot to a boil and simmer until all the veggies are cooked

7. Break the curry bricks into a bowl and set aside. 

8. Once the veggies are cooked, on low heat, add few bricks at a time and stir 

constantly so the bottom doesn't burn. Keep on adding all the bricks are in and 

melted. 

9. Once it is all melted, taste and see if you need more s&p (if needed)

10. Add the rest of the butter and stir to melt it in.

11. Serve it with some rice, ramen noodles, udon noodles, french fries, tator tots

Tip for reheating on the stove: Add a little water to it and always keep it on low heat.

This recipe is a vegetarian version because you can always add your favorite protein on top so the whole family can enjoy it their way. Some suggestions are: chicken katsu, sauteed chicken, steak, seared salmon, sauteed tofu, fried chicken, fried egg, endless options!

Freezes very well so it is awesome for stocking up for quick meal. Japanese curry is like a pot of chili for an American family. Each household has its own flavors and tips.

This recipe is also using the basic ingredients with our veggies. We live in Sacramento, THE heart of farm to fork so be creative and enjoy swapping out the veggies or adding more!

Some suggestions:

Fall/Winter: parsnips, sweet potatoes, kabocha squash, kale, leeks, brussel sprouts, cauliflower

Spring: asparagus, turnips, watercress, mustard greens, peas

Summer: tomatoes, squash, eggplant, okra, zucchini, corn, peppers
