Cranberry Brie Bites

1 (8-oz.) tube crescent dough
Cooking spray, for pan Flour, for surface 1 (8-oz.) wheel of brie
1/2 c. whole berry cranberry sauce
1/4 c. chopped pecans

6 sprigs of rosemary, cut into 1" pieces. 

Preheat oven to 375° and grease a mini muffin tin with cooking spray.
On a lightly floured surface, roll out crescent dough, and pinch together seams. Cut into 24 squares. Place squares into muffin tin slots.
Step 2
Cut brie into small pieces and place inside the crescent dough. Top with a spoonful of cranberry sauce, some chopped pecans, and one little sprig of rosemary.
Step 3
Bake until the crescent pastry is golden, about 15 minutes.

Tangy Cheese Ball

2 cups (8 ounces) shredded sharp cheddar cheese
6 (3 ounce) packages cream cheese, softened
1 medium onion, grated
3 tablespoons Worcestershire sauce
2 drops hot sauce
1/2 to 1 clove garlic, minced
1 cup chopped pecans

Combine all ingredients except pecans; mix well. Chill overnight. Shape into a ball, and roll in pecans. Serve with crackers.
Yield: 1 cheese ball

Cornbread Dressing by G. Garvin

(modified by Courtney Dempsey)

* Before prepping dressing; thaw phyllo cups

1 batch corn bread
1/2 cup (1 stick) butter
2 medium leeks, diced
4 stalks celery, diced
1 1/2 teaspoons poultry seasoning
1 1/2 teaspoons dried sage leaves
2 cups veggie stock
1/2 cup heavy cream

First prepare corn bread; set aside. Preheat oven to 350 F. In a large saucepan melt butter over medium heat. Add leeks and celery; sauté until tender. Stir in poultry seasoning and sage. Crumble in corn bread and combine well. Stir in veggie stock and cream; mix well.

Pour corn bread mixure into a greased 13x9x2" pan. Bake for 30 to 35 minutes or until golden.

Scoop dressing into phyllo cups, top with pepper jack cheese (or cheese of your choice) and follow baking instructions.

Butternut Squash and Burrata Crostini

1 small butternut squash, peeled and deseeded, medium diced

2 tablespoons olive oil

½ bunch fresh sage, leaves picked

2 tablespoons salted butter

1 teaspoon aci pul biber or crushed red pepper

1 tablespoon maple sugar

1 teaspoon kosher salt

¼ teaspoon freshly ground black pepper

1 cup whole walnuts, toasted

2 balls burrata, sliced into rounds

1 baguette, sliced into ¼ inch rounds

Preheat the oven to 400 degrees, take diced butternut squash and add to a mixing bowl, toss with olive oil, pul biber, maple sugar, kosher salt, and black pepper.

On a parchment lined sheet tray, add the seasoned squash in an even layer and place into the oven. Roast until evenly browned and cooked through, about 18-20 minutes.

In a saute pan, add the butter and heat until bubbling then add the sage. Remove crispy sage leaves from the pan and allow the butter to caramelize and then turn off heat.

Slice baguette into rounds and lay onto a parchment lined baking sheet, brush with half the brown butter, season with salt and pepper and place into the oven. Cook until golden brown for about 6-8 minutes.

To assemble, lay out crostinis and top with slices of burrata and sprinkle salt over the top of each piece. Spoon 1-1 ½ tablespoons of roasted squash on top and press a bit so they stick into the burrata. Drizzle the tops of each with the browned butter and then top each with a crispy sage leaf.


2½ Ibs. fresh spinach (chopped)
1 Ib. feta cheese
or 2 bags frozen chopped
4 eggs, beaten
8 oz. cottage cheese
1 bunch green onions, sliced
1 lb. filo dough
Salt & pepper to taste
1 handful fresh dill, chopped
2 cubes unsalted butter
1 lg. onion, chopped

• Melt and clarify butter.
• Beat eggs; add crumbled feta and cottage cheese; refrigerate until needed.
• Sauté onions until tender in ¼ inch oil in large saucepan.
• Add salt and pepper to taste.
• Add green onions and spinach.
• Sauté until spinach is wilted.
• Add dill and a little butter; sauté for another few minutes, stirring constantly.
• Drain/squeeze spinach mixture of any liquid.
• Add eggs/cheese mixture to spinach mixture.
• Spread sheet of foil (a few inches bigger than sheet of filo) as work surface on your table.
• Brush melted butter on 4 to 5 sheets of filo.
• Place spoonfuls of spinach mixture about 1 inch from edge, along long side of sheets.
• Butter edges of filo, fold in sides, butter the fold and roll up jelly-roll style.
• Place on clean sheet of foil and roll up. Can be frozen until needed. Makes 5 to 6 rolls.
• Spray baking sheet (or foil-lined baking sheet) with cooking spray.
• Slice/score approximately 1½ inches to 2½ inches (this must be done before baking or you will have a mess trying to cut it after it has been baked).
• Bake at 375° for 45 minutes or until golden brown

Don't be a goldfish and forget to make this for your next gathering. Sassy and playful, this goldfish mix is perfect for snacking. Make a batch to share with teammates, serve as pre- game day snacks, or bring to family potlucks. This mix is tangy and crunchy and loaded with irresistible goldfish, bagel bites, and Chex. Watch these little fi shies fly out of the bowl- they're that good!
■ 1⁄2 cup (1 stick) unsalted butter, melted
■ 1 Tablespoon hot sauce
■ 3 Tablespoons Worcestershire sauce
■ 1 Tablespoon onion powder
■ 2 Tablespoons packed dark brown sugar
■ 2 1⁄2 teaspoons garlic powder
■ 1 1⁄2 teaspoons ground mustard
■ 1 1⁄2 teaspoons seasoned salt (like Lawry's)
■ 1⁄2 teaspoon smoked paprika
■ 4 cups preferred variety of Chex (or use a mix)
■ 2 cups goldfish crackers
■ 1 1⁄2 cups bagel chips
■ 1⁄2 cup grated Parmesan
1. Set an oven rack in the middle position and preheat the oven to 250ºF.
2. In a small bowl, whisk together the melted butter, hot sauce, Worcestershire sauce, onion powder, brown sugar, garlic powder, ground mustard, seasoned salt, and paprika.
3. In a separate larger bowl, toss together the Chex, goldfish crackers, and bagel chips.
4. Pour the melted spice mixture over the dry Chex mixture and stir to coat.
5. Stir in the grated Parmesan and mix well.
6. Transfer to the prepared baking sheet that has been lined with parchment paper. Spread the mixture in an even layer.
7. Bake for 30 minutes. Remove from the oven, give the mixture a good toss, and bake for an additional 30 minutes, or until dry and fragrant. Cool before serving.
8. Store leftovers in an airtight container at room temperature for up to 1 week. 

There's a whole lot of Ted Lasso magic in these biscuits-use them to win over your boss, your coworkers, or anyone else in your life who may need a sweet treat to numb the sting of defeat. Warning: Friendship may ensue!

• 1 tablespoon unsalted butter, at
• room temperature, for greasing
• 11/2 cups all-purpose flour
• 1/2 cup almond flour
• 1/2 cup granulated sugar
• 1/2 teaspoon coarse salt
• 1 cup (2 sticks) unsalted butter, cubed and chilled
• 1 teaspoon vanilla extract or paste
• Pinch of turbinado sugar (optional)

1. Set an oven rack in the middle position and preheat the oven to 350°F. Grease the baking dish with butter and set aside.
2. Pulse both flours, the sugar, and salt in the bowl of a food processor to combine.
3. Add the butter and vanilla and pulse until the dough resembles wet sand.
4. Transfer the dough into the baking dish, evenly smoothing it with an offset spatula.
5. Using your hands, firmly press the mixture into the dish to flatten the mixture. If the mixture is too sticky, lay a piece of parchment paper on top of the dough during this process.
6. Bake for 30 to 35 minutes, until the top is lightly golden.
7. Remove from the oven, sprinkle with the pinch of turbinado sugar, and let cool before cutting. Store in an airtight container at room temperature for up to 3 days, in the fridge for up to 2 weeks, or in the freezer for up to 3 months.
