Maloney's Healthy Recipes

Baked Lemon-Herb Salmon

Makes:10 Servings
Serving Size:approx. 4 ounces

This would be great for feeding a crowd and leftovers can always be used for topping a salad.

Ingredients:
Olive oil
1 (3 1/2-pound) salmon fillet
1 pinch of salt
1/2 teaspoon freshly ground black pepper
10 fresh chives
4 thyme sprigs
4 oregano sprigs
4 rosemary sprigs
10 (1/8-inch-thick) slices lemon (about 1 lemon)
1 medium onion, sliced
1/8 cup apple cider vinegar
Preparation:
Preheat oven to 450°.

Line Shallow roasting pan with foil; coat lightly with olive oil.
Place fish on prepared pan. Sprinkle salmon with salt and pepper. Arrange chives, thyme, oregano and rosemary horizontally across fish. Arrange lemon slices and onion slices on top of herbs. Drizzle cider vinegar on top.

Cover with foil; seal. Bake at 450 for 30 minutes or until fish flakes easily when tested with a fork. Serve warm or at room temperature.

Homemade Squashetti and Meatballs in Marinara Sauce

Ingredients:
1.25 lbs - Ground Turkey
1 - Spaghetti Squash
4 - Heirloom Tomatoes
Green Onion
Red Onion
Fresh Oregano
7 – Cloves Fresh Garlic
1 - Egg
1 – Can Chicken Broth (low sodium)
Red Pepper Flakes (optional)
Garlic Powder
Sea Salt
Coconut Oil
Olive Oil
Servings: approx 3
Prep time: 1.5 hours
Squashetti:
Preheat the oven to 350 degrees and place rack a notch or two above middle position. With the squash laying on it's side cut width wise to make approximately 6, 1 inch rings. Remove the seeds with your hands. Grease a cookie sheet with about a ½ tsp of coconut oil and place rings on the pan.
Place the 4 tomatoes in a glass pyrex dish. Place Squash in oven on upper rack and tomatoes on the lower rack.
Set timer for 55 minutes. Check tomatoes in 30 minutes. Tomatoes should be soft when done.
Meatballs:
In a medium saucepan, add can of broth and 1 – 2 cans of water (approximately 2 ½ inches deep) and turn on medium high and bring to a slow boil. In a large mixing bowl, add ground turkey, egg, 2 sprigs of chopped green onion, 2 – 3 sprigs of fresh minced oregano and 3 cloves of fresh garlic either minced or pressed. Add a dash of sea salt, about 1 teaspoon of garlic powder, and a pinch of red pepper flakes. Mix together and make approximately 10 meatballs. Keep hands wet with water to prevent mixture from sticking to your hands.
Marinara Sauce:
Remove tomatoes when soft. Cut out the area where the stem was attached. Peel off the skin and discard. Cut tomatoes in half and remove the seeds with your fingers. Caution: Very hot. Run under cold water if necessary. Chop up the tomatoes. In a sauce pan on medium setting, add a tablespoon of olive oil and stir in 2 slices of chopped red onion. When onion begins to sweat add 4 cloves of minced fresh garlic and 3 sprigs of minced oregano. Stir. Add a pinch of red pepper flakes if desired. Add in chopped tomatoes. Stir.
Remove squashetti with a fork in to a bowl or plate. Serve a spoonful of fresh marinara sauce and place turkey meatballs on top. And enjoy!

Save the Airtanker
Save the P3 Airtanker!  A group of firefighters is trying to resurrect a fleet of airtankers once used by the US Forest Service!!  We'll check out one of the P-3 Orion Airtankers that's been sitting idle for four years and show you how to help bring it back!!  Orion Aerial Firefighters have the manpower to bring the fleet back but they need financial support and have launched an Indiegogo campaign to raise the funds. The P-3 is the most maneuverable and proven airtanker in the United States.

Raley Field Auditions
Attention everyone!!! Are you looking to have a job at Raley Field during the Sacramento River Cats season? Well now is your chance as Raley Field is looking to fill 150 positions including Clean Team, Merlino's Orange Freeze, and Parking Attendants of the 2015 baseball season. One of the positions needing to be filled is Cat Crew. Cat Crew is the in-game promotions team that gets the crowed pumped up and executes the on-field promotions like shooting hot dog cannons and dancing on the dugouts. Today Cody is at Raley Field seeing if has what it takes to work the River Cats season!
