Dish It At Home: Ginger Elizabeth's Cranberry Sauce
Local Chefs Make Their Favorite Side Dish - Ginger of Ginger Elizabeth Chocolates shares her cranberry sauce recipe with us!
1 12oz Bag Fresh Cranberries
1/2c Water
1/2c Orange Juice
1c Sugar
1each Vanilla Bean, scraped
1each Cinnamon Stick
The zest of 1 orange
Method:
Put all of the ingredients together in a small-medium heavy bottom pot. Cook on medium high heat. When the mixture comes to a rolling boil reduce the heat to medium heat. Boil for about 10 minutes stirring constantly. Pull out the cinnamon stick 5 minutes into cooking and discard. As the cranberries cook, the will burst and turn into a puree. The cranberry sauce will look like a thick sauce, keeping in mind it will thicken slightly when it is cool. If the sauce is too chunky for your liking, take a hand blender to it or whisk it for a few minutes while it is boiling. When the cranberry sauce is done, remove from the heat and transfer to a container. Cool at room temperature for an hour and then refrigerate. Enjoy.
