And when the winner of the 2013 Boston Cookie Throwdown offers to drop her recipe for chocolate stout cookies just in time for St. Patrick's Day, the answer is always 'Yes, Please!' and 'Thank You!'
So, here it is, right from Top Shelf Cookies' owner, up-and-comer Heather Yunger.
Chocolate Stout Cookies
14.9 oz Guinness
8 Tablespoons Unsalted Butter
1 Cup Sugar
1 Cup Brown Sugar
1 Large Egg
1 teaspoon Vanilla
2 Cups All Purpose Flour
1 Cup Dark Cocoa
1 teaspoon Baking Soda
1/2 teaspoon Salt
1/3 Cup Powdered Sugar
Heat beer on stovetop over medium high heat. Reduce by half. Add butter and melt. Remove mixture from heat and allow to cool for a few minutes.
Whisk flour, cocoa, baking soda & salt in medium bowl, set aside.
Mix sugars until combined, add beer mixture and mix until combined. Add egg and vanilla to mix until combined.
Add flour mixture and mix until just incorporated and smooth.
The dough will be wet and similar to be similar to a brownie consistency. Chill dough in refrigerator for 4-24 hours.
Using a 1 1/2 Tablespoon scoop, scoop chilled dough and roll into dough balls and roll powdered sugar.
Bake 14-16 minutes on parchement lined baking sheets in a preheated 350 degree oven. Rotate baking sheets halfway through cooking. Dough should crack and look raw.
Cool on sheet for 5 minutes, on rack for 1 hour.
Enjoy with a glass of iced cold milk.
