Market District Recipes: No Bake Snack Bars & Butternut Squash Dip

No Bake Snack Bars

Makes: 16 bars
Prep Time: 1 hour (including 45 minute chilling time)

  • 2 cups dates, pitted
  • 1 cup Market District Cashew Butter
  • 1/2 cup unsweetened coconut flakes
  • 1 scoop Nature's Basket Whey Protein Chocolate Powder
  • 1/8 tsp salt
  • 1/3 cup sliced almonds
  • 1/4 cup 85% or 90% cocoa chocolate bar, chopped*

Add the dates, cashew butter, coconut, protein powder and salt into the bowl of a food processor. Process until the mixture forms a ball. Sprinkle the almonds in a 8x8 baking dish. Remove the mixture from the food processor and press evenly into the baking dish. Sprinkle the bars with the chopped chocolate and press into the mixture. Refrigerate until firm (approximately 45 minutes.) Remove from the pan and cut into bars.

* unsweetened or bittersweet chocolate can be substituted

Butternut Squash Dip

Makes: 1 1/2 cups
Prep Time: 5 minutes

  • 1/2 cup butternut squash, roasted, mashed and chilled
  • 1 cup Giant Eagle Nonfat Plain Greek Yogurt
  • 1/4 tsp sage, minced
  • 1/2 tsp honey or maple syrup (optional)
  • 1/8 tsp cinnamon
  • 1/8 tsp salt
  • Pinch cloves
  • Pinch nutmeg
  • Pinch cayenne pepper (or more to taste)

Place all of the ingredients in a bowl and mix thoroughly. Refrigerate until chilled.
