Market District Recipe: All American Seafood Boil

All American Seafood Boil
Compliments of Market District Chef Benjamin D'Amico
Serves: 4-6 Prep Time: 25 min. Cook Time: 20 min.
Ingredients:
Boiling Liquid:
- 2 quarts Water
- 6 sprigs Fresh Thyme
- 4 each Bay Leaves
- 4 sprigs Fresh Tarragon
- 2 each Garlic, fresh, bulbs
- 2 each Fresh Lemons, quartered
- 2 cups Beer or White Wine, Chardonnay or Larger style
- 3 tbsp Old Bay, Creole, or Cajun type of seasoning blend
Seafood (any combination or amount is fine, but the more variety the better):
- 1 ½ lbs Shrimp, 31/40, raw, shell-on
- 4-6 lbs King, Snow, or Dungeness Crab Clusters
- 1 ½ lbs Mussels
- 1 ½ dozen Littleneck or Middleneck Clams
- 4-6 each Lobster Tails
Additional Boil Ingredients:
- 3 each White Onion, medium, quartered
- 1-2 lbs Red Potatoes, Medium or small
- 4-6 ears Corn on the cob (optional to cut in half)
- 2 lbs+ Assorted Sausages, cut into 2 inch pieces (Linguica, Andouille, Kielbasa, &/or Chorizo)
Garnishes:
- 1 loaf Sourdough or other fresh Crusty Bread
- 2 tbsp Fresh Parsley
- 1 each Lemon, quartered
- 2 tbsp Old Bay, Creole, or Cajun type of seasoning blend
- 2 sticks Clarified Butter
Directions:
1. Bring all of the boil liquid ingredients together in a large stock pot. (a pot with a built in steamer basket works best).
2. Allow the liquid to boil for at least 5 minutes to help the flavors meld together, then reduce to a simmer.
3. Add the onions and potatoes to the boil and cook for 10 minutes.
4. Next add in the sausages and corn on the cob and cook for 5 minutes.
5. Then add in the clams, mussels, and crab, cook for another 2 minutes.
6. Finally add in the shrimp and lobster and cook covered for another 5 minutes.
7. Once all of the food is fully cooked, remove from the pot and place onto a very large platter or several platters.
8. Season the ingredients with additional seasoning, fresh parsley, & lemons.
9. Serve with some sliced bread, clarified butter and a few crab shell crackers.
