Grilled Chicken And Penne Pasta

Try his Italian menu option No.3: Grilled Chicken; Penne Pasta with Spicy Tomato sauce; Grilled asparagus; and Caesar salad.

The following are the protein and starch recipes:

Grilled Chicken
Serves 10

Ingredients
10 boneless, skinless chicken breast halves
3 tablespoons olive oil
4 garlic cloves
2 rosemary sprigs, leaves chopped
Salt and freshly ground pepper

Method:

  1. Coat the chicken lightly on both sides with olive oil, garlic, rosemary, salt and pepper. Refrigerate and allow to marinate for one hour.
  2. Preheat the grill, barbecue or broiler.
  3. Place chicken over medium-high heat and cook until done. Serve with pasta and spicy tomato sauce.

Penne Pasta with Spicy Tomato Sauce
Makes 4 cups

Ingredients
1 package of Penne pasta (cooked as per directions on box)
4 pounds Roma tomatoes, fresh or canned
1/4 cup olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1/2 teaspoon sugar
Salt
1 bay leaf
1/2 teaspoon red pepper chili flakes
6 fresh basil leaves, torn into pieces
3 tablespoons heavy cream (optional)

Method:

  1. If using fresh tomatoes, peel, seed, and puree. If using canned, seed and puree. Set aside
  2. In a large saucepan, heat the olive oil over medium heat. Sauté the onions and garlic until golden. Add the pureed tomatoes, sugar, salt to taste, bay leaf, and red pepper flakes. Simmer uncovered for 30 minutes. Stir in the basil and the cream if using.
