Tzatziki
Ingredients
• 16 ounces Greek yogurt or Kifer Cheese
• ½ large cucumber
• 1 lemon
• 1 large bunch fresh dill
• 1-2 cloves garlic, (put through a garlic press or minced)
• 1/3 cup olive oil
Directions
1: If you are using Greek yogurt strain the yogurt in cheese cloth. This step is not necessary if you are using Kifer cheese.
2: Grate the cucumber and press it between paper towels to get out the excess moisture, re-hydrate the cucumber with the juice from one lemon and set it aside.
3: De-stem and finely chop the dill and garlic
4: Mix all ingredients together
5: Garnish with more olive oil and a Kalamata olive.
