Strawberry Fruit Fool Recipe
Serves 6 to 8
2 baskets strawberries
1 tablespoon sugar
1 cup heavy cream
½ teaspoon vanilla
Mint leaves
Set aside half a basket of smallest strawberries for garnish; purée remaining strawberries with 1 teaspoon sugar. Set aside.
Whip cream and add 2 teaspoons sugar. When almost done, add vanilla and continue to whip until done.
Gently fold puréed strawberries into whipped cream leaving a few white streaks. Pour into glass dishes or stemmed wine glasses. Chill.
To serve, garnish with small berries and a mint leaf.
