Spiced Cucumber Salad

Looking to add a little flavor boost to your diet-conscious meal without adding the extra calories?  The chef from "LYFE Kitchen" shows us how to prepare low-sodium, low-calorie and low-fat meals without skimping on the taste!

Chef John Mitchell shared his recipe for a delicious side dish.

Spiced Cucumber Salad

Serves 4

The Salad:
1 Pound Cucumber (about 3 Medium ones) peeled, seeded, and thinly sliced
1 Serrano pepper, seeded and minced
1 Scallion, sliced thin
1 Tbl Chopped Cilantro
¼ cup Dry Roasted Peanuts

The Dressing:
¼ Cup Brown Rice Vinegar
1 Tsp Coconut Palm Sugar
¼ tsp Salt

Method:

In a small bowl, combine the vinegar with coconut palm sugar and salt, wisk until dissolved. Balance to taste.

To Prepare the Salad:
In a large bowl, combine the cucumbers, jalapenos, scallions, and cilantro and marinate with the dressing for 5 minutes before serving. Roughly chop the peanuts and sprinkle over the top of the salad just before service.

Serving Suggestion:

Serve on the side with LYFE Kitchen Chicken Masala or Coconut Curry Ready to Eat Meals.
