Recipes: Sneak Veggies Into Your Kids' Food

Listen up parents of picky eaters! We have a way to sneak veggies into your child's favorite foods! Melissa's with a chef and a young taste tester to show how you can kick cheap store bought staples (KRAFT MAC N CHEESE AND BOX BROWNIE MIX) up a nutritious notch!

Sneaky Mac and Cheese (Recipe: Jenni Brewster, Treybcakes)
1 Box Macaroni and Cheese (your favorite brand)
1/2 cup chopped cauliflower
1/2 cup peeled and chopped butternut squash
1/2 cup shredded cheese
1 Tbsp Olive Oil

- On a baking sheet, toss the cauliflower and squash in the olive oil and bake at 425 degrees for 20 minutes (or until the veggies are soft)
- Cool the vegetable and then puree them.
- Prepare the macaroni and cheese according to the box directions. Add the pureed veggies and the shredded cheese. Heat until the cheese is melted, and serve!

Black Bean and Zucchini Brownies (Recipe: Jenni Brewster, Treybcakes)

1 Box of Brownie Mix (any brand)
1 can of Low Sodium or No Salt added Black Beans (drained and rinsed and pureed with 1/2 cup of water)
1/2 cup of shredded zucchini

- Add the pureed black beans and zucchini (that's ALL... no eggs or oil) to the brownie mix and mix well. The mixture will be thick.
- Spread evenly into the pan and bake according the the box directions. They may take a few minutes extra to bake because of the added moisture from the beans and zucchini.
