Recipe: Deviled Dungeness Crab
Serves 4.
INGREDIENTS:
6-8 tbs. butter
2 tbs. flour
1 cup manufacturing cream (light cream will work also)
1/2 teas, Worchester sauce
1 tbs. grated shallots (red onion will work)
3/4 lb. fresh Dungeness crab or any locally available fresh crab (frozen will be too watery)
1/4 cup cream cheese
1/2 cup Italian bread crumbs
4 lemon slices
1/2 teas. Paprika
PREPARATION:
1. Preheat to 425 degrees
2. Melt 2 tbs, butter in saucepan until foamy. Add flour and cook 2 to 3 minutes.
3. Slowly add cream, Worchester, and onions. Still until thoroughly blended and thickened.
4. Remove from heat and stir in crab meat until well mixed. Spoon mixture into four scallop shells or pasta shells and refrigerate until well chilled.
5. Remove from refrigerator and top with bread crumbs dotted with remaining butter, lemon slices and paprika.
6. Bake for 15 minutes until breadcrumbs are browned and crab mixture is bubbly.
7. Serve immediately.
