On Friday, Jason Maloney's uncle came to visit. He is from San Diego, retired, and the SPITTING image of Truck Tracker Jason "Toots" Maloney! He loves to cook and specializes in BREADS & Jams.

BANANA EVERYTHING BREAD
I took the original Banana Nut Bread recipe from The Joy of Cooking and then added "my stuff".
The recipe is for ONE loaf of bread for 6 cup bread pan (8 1/2" x 4 1/2") I double the recipe but I'll list ingredients for the single serving......
preheat oven to 350 and grease the inside of the pan with butter or Pam (I use a silicone pan and no greasing is required)
whisk together:
1 1/3 cups all purpose flour
3/4 teaspoon of salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
In a large bowl beat on medium - high speed 2-3 minutes:
5 1/3 tablespoons unsalted butter (soft)
2/3 cup white sugar
Add the flour mix to the butter/sugar at low speed
add 2 large eggs (lightly beaten)
add 1 cup mashed and very ripe bananas (about 2 large bananas)
1/2 cup of coarsely chopped walnuts
Here is the STUFF I add:
I use a lot more nuts ( maybe total of 3/4 - 1 cup approx. and use a 50/50 mix of walnuts and pecans)
1/4 - 1/2 cup semi sweet chocolate chips
1/2 cup dried cranberries
1/4 cup dry coconut
1/2 cup Heather bar crushed toffee bits
Mix all the ingredients well, and then add 1/4-1/2 cup fresh or frozen blueberries (thawed) until just belnded
People can increase the amount of these "extra ingredients" or leave them out if they don't like something (coconut for example)
Put in the cake pan and Cook in 350 degree oven for 50-60 minutes until a toothpick comes out clean when inserted in the middle of the bread.
