Golden Onion Biscuits

Tina Macuha was at the home of Karen Holmes, the owner/chef of Karen's Bakery, for today's installment of Inside-A-Kitchen. Karen showed how to make Golden Onion Biscuits.

The Recipe

  • 2 medium yellow onions, diced
  • Sautee the onions in 4 T of butter until golden and soft. Allow to cool
  • 7 cups (2# 3 oz) all purpose flour
  • 3 T baking powder
  • 1 T salt

1. Combine the dry goods in the bowl of a stand up mixer. Allow the goods to mix on low speed.

  • 9 oz. COLD unsalted butter, cut into very small pieces

2. Add the butter to the dry goods and continue to mix on low speed, allowing the butter to mix in to the size of small peas. The flour will look like sand.

  • 3  C milk

3. Add the reserved cooled onions, all at once, and then pour in the milk.
4. Allow the flour and liquid to come together, but don't allow it to completely mix.
5. On a floured table, dump the dough out and knead just ten times, just until you don't have any more flour showing and the dough is wet but holding together.
6. You can roll the dough with a rolling pin, or pat out by hand, to a thick pad, about 1 ½"-2". Cut into desired sizes with a biscuit cutter (or you can cut them into squares) and put on a cookie sheet.
7. Brush the tops of the biscuits with egg wash (1 beaten egg and 1 T milk) or cream.
8. Bake in a preheated 400° oven for 12-18 minutes.
