Blue Collar Cookbook - Nana's Pumpkin Bread
The author of "The Blue Collar Cook Book" stopped by Good Day and shared her recipe for her Nana's Pumpkin Bread. She also tells us why she decided to write a cook book.
Nana's Pumpkin Bread
Ingredients:
4 eggs
3 cups of sugar
2 teaspoons of baking soda
½ teaspoon of baking powder
1 ½ teaspoons of salt
1 teaspoon of cinnamon
1 teaspoon of cloves (ground)
1 teaspoon of nutmeg (ground)
2/3 cups of water
1 cup of oil
1 can (15oz) canned pumpkin
3 ½ cups of flour
In large mixing bowl blend the eggs, sugar and oil until well mixed – about 2 minutes. Add all the other ingredients. Mix well. Spray 3 large loaf pans or 7 to 8 small loafs (I prefer the disposable aluminum). Fill ½ to ¾ up. Place all three loafs in a preheated oven at 325º for one hour. To check to see if they are cooked, tap your finger in the middle of the loaf and, if it springs back it is done. Remove from oven and cool. This is great as a dessert, snack or for breakfast with a little butter.
