Silverthorne hopes a new food market will lure more visitors to its downtown. The Bluebird Market is on Blue River Parkway.

"The timing of 11 businesses and build outs is a little, little bit shy of moon launch here in Summit County," is how Scott Vollmer with the market described getting everything up in running.

You'll find Colorado craft beer, pizza and crepes as well as a whole lot of history.

Vollmer said there's a real gem tucked into the space -- "A building dating back to the late 1800s that we've decided to encapsulate inside of the greater structure of the food hall."

That building is the Dilllon Inn, a saloon lifted out of time and placed in the modern market.

"A lot the people working on the tunnel and building the reservoir -- this watering hole, if you will, hydrated many of those hands that helped build that infrastructure for Summit County," said Vollmer.

Inside you'll find old farm equipment, cash registers and other mementos.

While the restaurants are serving and the retailers are open, the Dillon Inn itself will open in a few months.

"We're this great location for not just Summit County in Silverthorne but also traveling through I-70," Vollmer said. "We're right off the exit. You don't have to eat fast food."
