Narsai David Recipe: Vegetarian Mincemeat

(KCBS) - KCBS Food and Wine Editor Narsai David said he had so many green tomatoes this year, because with the late and cold spring, many did not ripen. His good friend Mary Spivey brought over a 1925 edition of The Settlement Cookbook, and this recipe was adapted from one in that book.

Yield 8 cups

5 lb green tomatoes
1 large apple, cored
1 orange, chopped fine in blender or food processor
½ lemon, chopped fine in blender or food processor
2 2/3 cups brown sugar
2/3 cup raisins, washed
2/3 cup currants, washed
½ cup vinegar
1 ½ tsp salt
1 ½ tsp cinnamon
½ tsp nutmeg

Chop tomatoes and apple in small pieces, and cook with orange, lemon, brown sugar, raisins and currants until tender, and liquid is reduced.

Add vinegar and cook for just another couple minutes. Cool and add spices.
