Narsai David Recipe: Sweet And Sour Cranberry Relish

(KCBS) - KCBS Food and Wine Editor Narsai David suggests a cranberry relish for your Thanksgiving dinner. This is easy to make and the flavor really improves if you let it age for a few days in the fridge.

Yields 3 cups

1 orange, washed, quartered, seeded and
ground coarsely with the peel
1 medium onion, chopped
1 12 oz. pkg. cranberries (about 4 cups)
1 inch knob of fresh ginger, shredded
1/2 cup Port or apple juice
1/3 cup vinegar
1-1/2 cups brown sugar
1 TBS mustard seeds
1/2 cup dried cranberries

Note: If using a food processor, process the orange quarters for 20-30 seconds. Then add the onion and process only until it is coarsely chopped.

Place all ingredients in a thick sauce pan. Bring to boil; then lower heat and simmer 25-30 minutes. The flavor will improve after aging for a day or two.
