Ingredients
3/4 lb. peeled deveined shrimp
1/2 cup skim milk
1 egg white 1/4 cup cornmeal
1/4 cup flour
1/4 tbsp. low sodium creole seasoning
4 tbsp. low fat mayonnaise
3/4 tsp. Old Bay seasoning
1/4-1/2 tsp. cayenne pepper (to taste)
3 whole wheat ciabatta, Panini or new Orleans French bread (approximately 6 inches long)

Preheat the oven to 375 degrees.

Peal and devein the shrimp: Use a small knife to cut a long slit along the front and back of the shrimp. Remove the dark veins. Put cleaned shrimp in a large bowl.

To separate the egg white from yolk, crack the egg lightly on the side of a bowl, shift the yolk from one half of the shell to the other, allowing the white to fall into the bowl below it.

Prepare your measured ingredients: 1/2 cup skim milk 1 egg white 1/4 cup cornmeal 1/4 cup flour 1/4 tbsp. low sodium creole seasoning 4 tbsp. low fat mayonnaise 3/4 tsp. Old Bay seasoning 1/4-1/2 tsp. cayenne pepper (to taste)

Mix milk and egg white in a large bowl. Pour mixture into bowl containing the shrimp. Let sit for at least five minutes.

Pour the cornmeal, flour and Old Bay seasoning together on a plate.

Lightly mix dry ingredients.

Dredge each shrimp on both sides in the cornmeal mixture.

Place shrimp on an aluminum cooking sheet sprayed with olive oil cooking spray. Lightly spray the shrimp with olive oil spray.
Bake for five minutes, turn broiler to high and broil for one to two minutes until shrimp turn light brown and crunchy.
While shrimp are cooking, mix together mayonnaise, old bay seasoning and 1/4 to 1/2 tsp. cayenne pepper (for more heat you can increase the cayenne pepper).
The consistency of your dressing should look something like this.
Cut tomatoes. Separate lettuce leafs. Cut breads in half.
When your shrimp come out of the oven, they should look like this: crispy, flaky and lightly browned.
Toast or grill bread. No oil or butter is necessary.
Spread mayonnaise mixture evenly amongst the three rolls or buns on both top and bottom pieces. Add shrimp, lettuce and 2 slices tomato.
