Food Issue: JELL-O pudding treats

These recipes for holiday dessert treats come from Kraft Kitchens.

Spiced Pudding Squares
Serves 24
Prep: 25 mins.
Total time: 3 hrs. 12 mins.

Ingredients:
1/2 cup butter, melted, cooled
1 egg
1 pkg. (2-layer size) spice cake mix
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup cold milk
1-1/2 tsp. pumpkin pie spice
1-1/2 cups thawed COOL WHIP Whipped Topping
2 Tbsp. toffee bits

Instructions:

HEAT oven to 375 degrees F.

MIX first 3 ingredients just until blended; press onto bottom of 13x9-inch pan sprayed with cooking spray.

BAKE 15 to 17 mins. or until toothpick inserted in center comes out clean. Cool completely.

BEAT pudding mix, milk and spice in medium bowl with whisk 2 min. Gradually stir in COOL WHIP until well blended; spread over crust.

Refrigerate 2 hours. Sprinkle with toffee bits just before serving.


Kraft Kitchens Tips: Variation

Prepare using a chocolate cake mix and 1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding.

Dessert can be refrigerated up to 2 days before serving.

Pumpkin Pie Spice Substitute

No pumpkin pie spice on hand? No problem! Here's an easy way to make your own. For each 1 tsp. of pumpkin pie spice needed, just combine 1/2 tsp. ground cinnamon, 1/4 tsp. ground ginger, 1/8 tsp. ground allspice and 1/8 tsp. ground nutmeg.

Pumpkin-Spiced Mini "Cake" Balls
Serves 12
Prep: 25 mins.
Total time: 25 mins.

Ingredients:
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 tsp. pumpkin pie spice
1/3 cup cold milk
1 cup thawed COOL WHIP Whipped Topping
3 doz. vanilla cake donut holes (1-1/2 inch)
1/4 cup chocolate syrup

Instructions:

BEAT pudding mix, spice and milk with whisk in medium bowl 2 min. Stir in COOL WHIP.

CUT thin slice off each donut hole; discard. Cut donuts in half; fill with pudding mixture. Press each together gently to secure.

PLACE, cut-sides down, on plate to serve. Drizzle with chocolate.

Kraft Kitchens Tips: Special Extra

Prepare as directed. Roll in festive sprinkles or mini toffee bits to evenly coat the sides of the pudding filling.

Variation

Do not cut slices off bottoms of donut holes. Prepare recipe as directed. Insert lollipop stick into center of each donut hole to serve.
