Somen Noodles
10 1/2 ounces cake flour
1 3/4 ounces all purpose flour
7 ounces water
1 Tbsp sesame oil
Knead for about 15 mins
Let rest for 30 mins
Roll out and cut into size of spaghetti noodles *Boil for 3-4 minutes to cook
Italian Noodles
12 ounces "00" flour
1 egg
Pinch salt
Tbsp olive oil
Knead together
Press and wrap in plastic to refrigerate for hour and a half Using rolling pin or machine, laminate dough for about 10 mins Stretch to desired thickness and then cut to desired shape and size (fettucini, angel hair, ravioli,etc) *Boil for 3-4 minutes to cook
