White Chocolate & Candy Cane Martini
Makes 1
3 ounces half & half
2 ounces white chocolate liqueur
1 ounce vanilla vodka
1/8 teaspoon peppermint extract
White chocolate
Peppermint flavored hard candy (preferably red)
Crushed ice
Add all ingredients to a cocktail shaker. Shake vigorously! In a double boiler, melt white chocolate and dip rim of glass into it. Immediately dip rim of glass into plate of crushed red peppermint candy. Garnish with a candy cane!

Lemon Meringue Pie Drop
Makes 1
2 ounces freshly squeezed lemon juice
1½ ounces Vanilla Infused Vodka
1 ounce simple syrup
1/8 teaspoon freshly grated lemon zest
Ice
Meringue Topper
Makes 6
2 eggs
½ cup sugar
1/8 teaspoon cream of tartar
Separate egg yolks from egg whites. (Put egg yolks aside for another recipe). Beat egg whites on high speed. Add cream of tartar and gradually mix in sugar until dissolved. Once your egg whites form stiff peaks, they are ready. Place a large piece of parchment paper onto a baking sheet and draw out 6 circles (we used round cookie cutters). Make sure the circles will fit your martini glasses. Spoon meringue mixture into a pastry bag with a large round tip (or a Ziploc bag with one 1/2 inch corner cut off). Squeeze the meringue mixutre into circular shapes on your parchment paper. Bake at 275 degrees for 30 minutes to one hour. The longer you bake them the browner and crisper they will get.
To a cocktail shaker add all ingredients. Shake vigorously until a frost forms on the outside of the shaker. Garnish with a homemade meringue floating on top!

Thin Mint-tini (Mocktail)
Makes 1
3 ounces chocolate milk
1 ounce chocolate syrup (plus extra for rim)
¼ teaspoon peppermint extract
10 Chocolate wafer cookies (smashed with a rolling pin)
Ice
Add chocolate milk, chocolate syrup, peppermint extract and ice to a cocktail shaker. Shake vigorously until a frost forms. Dip rim of glass into a plate of chocolate syrup and then dip into a plate of crumbled chocolate cookies. Strain into a martini glass and garnish with a jaunty sprig of mint!
