Italian Sausage and Onion Bread
Note, this recipe works best with family helpers
There are several ways to make the dough.
1-The dough is very similar to pizza dough. You can buy pizza dough at most markets One Briolatta needs about one pound of dough (does not need to be exact).
2-You can buy a box of Pillsbury® Hot Roll Mix. One box will make one Briolatta.
3-I use my bread machine to make the dough.
Bread machine recipe:
1 1/3 cups of whole milk
2 tbs. olive oil
¾ tsp salt
2 tsp. sugar
4 cups of all-purpose flour
2 tsp. dry yeast
Warm milk to room temperature. Add to bread machine followed by the rest of the ingredients in above order.
Set machine to dough cycle. Check on dough about 15 minutes into cycle. Add 1 tbs of flour or water if needed for dough to come together.
Dough needs to be punched down and set in an oiled bowl to rest at least 20 minutes. I add a bit of olive oil & toss the dough into a gallon zip lock bag and store to 2 days in my fridge.
The rest of the ingredients:
One pound of Italian Sweet sausage -remove from casings and separate into small chunks while you cook half way (still a bit of pink here and there) drain off oil.
One very large yellow onion- cook in olive oil until just transparent.
Now that you have the dough and the sausage & onions prepped it is on to the fun part!
You will need a flat counter top-table top.
Roll out dough with a large rolling pin to about 1/8 inch thick circle. You want it thin as possible without making holes.
Be sure you keep adding flour under it so it doesn't stick to the surface. Make sure it's in a nice circle. Your are now ready for the second step.
Lightly oil the dough surface with your hands - lightly. Then dot the whole surface with 1 pound of the sausage which should be in small pieces.
Then cover evenly with one of the cooked onions. Then starting at one end, roll up your dough tightly like a jelly roll and then roll into spiral. Put in greased pie tin.
Bake in a 350 degree oven for 45 to 50 minutes. It's done when you turn it out of the tin, tap the bottom and it sounds hollow. If you don't hear that sound, put it back in for a few more minutes.
