Marianne's Family Potato Salad
My family has been making this recipe for as long as I can remember! It's an easy one! You'll want to make it a few hours before you need it to give it time to chill.
Ingredients:
4 baking potatoes, or an equal amount of your favorite potato
4 hard-boiled eggs
1 cup chopped celery
1 cup chopped pickles
½ cup chopped white onion
½ cup green onion
1 cup fat-free mayo
Salt & pepper
Directions:
Boil the potatoes with skin on, until they can be fork-pierced. Let cool.
Hard-boil the eggs, and let cool.
Cut the potatoes, leaving skin on if you like, into chunks.
Peel the eggs and chop into small pieces. (I remove 3 of the 4 yolks to lower the cholesterol in the recipe.) I use an egg chopper for best results!
Add the celery, pickles, onions and toss lightly. Add the mayo, and salt & pepper to taste. Chill for 2 hours before serving. Yum![

Courtney's Nana's Peach Cobbler
Ingredients:
4 cans 29oz peaches
1 stick butter
2 cups brown sugar
cinnamon
nutmeg
2 prepared rolled pie crusts (or substitute with shortbread cookies)
Directions:
In large pot combine peaches, butter and brown sugar and bring to a boil. Add cinnamon and nutmeg to taste and reduce to a simmer for 15 minutes.
**You can thicken the cobbler mixture by slowly stirring in a mixture of flour and water until desired consistency.
While melange is simmering, prepare a large casserole dish for the crust by unrolling and shaping 1 pie crust to the bottom of the dish...if using shortbread cookies arrange cookies until the bottom of the casserole dish is completely covered. Set second pie shell/additional cookies to the side.
Once the peaches are ready, pour the mixture over the pie/cookie crust and cover with second pie shell/shortbread cookies.
Bake at 350 degrees for 40 minutes. Serves 10-12 people.
