Dish It At Home: Winter Greens with Crystallized Cranberries and Shaft Blue Cheese

Local Chefs Make Their Favorite Side Dish - Patrick Mulvaney of Mulvaney's shares his recipe for Winter Greens with Crystallized Cranberries and Shaft Blue Cheese.

Procedure:
Toss greens in bowl with vinaigrette and season to taste with Salt & Pepper.  Place in serving bowl or plate individually, top with cranberries and crumbled blue cheese.

Crystallized Cranberries

Ingredients:
12oz cranberries
2 egg whites, lightly beaten
Sugar

Procedure:
Toss cranberries in whites, strain well in a pasta basket.  Roll in sheet pan with sugar until all berries are separate and well coated.  Let sit for at least 2 hours, if not using immediately store in air tight container.

Frozen cranberries need to be used the same day they are made, they get soggy.

Traditional Vinaigrette 1 cup

Ingredients:

2   shallots, minced
1 T  Dijon mustard
2Z   champagne vinegar
6Z   olive oil (mixed to taste)
S&P and fresh herbs of choice

Procedure:

- Put shallots, mustard and vinegar in a bowl, whisk together and preseason
- While whisking drizzle in oil slowly, check for flavor and store
- Whisk again before using.
