It's time to finish up our Good Day "Appsgiving!" John has prepared some amazing spanakopita for everyone to try. RECIPE 2½ Ibs. fresh spinach (chopped) 1 Ib. feta cheese or 2 bags frozen chopped 4 eggs, beaten 8 oz. cottage cheese 1 bunch green onions, sliced 1 lb. filo dough Salt & pepper to taste 1 handful fresh dill, chopped 2 cubes unsalted butter 1 lg. onion, chopped • Melt and clarify butter. • Beat eggs; add crumbled feta and cottage cheese; refrigerate until needed. • Sauté onions until tender in ¼ inch oil in large saucepan. • Add salt and pepper to taste. • Add green onions and spinach. • Sauté until spinach is wilted. • Add dill and a little butter; sauté for another few minutes, stirring constantly. • Drain/squeeze spinach mixture of any liquid. • Add eggs/cheese mixture to spinach mixture. • Spread sheet of foil (a few inches bigger than sheet of filo) as work surface on your table. • Brush melted butter on 4 to 5 sheets of filo. • Place spoonfuls of spinach mixture about 1 inch from edge, along long side of sheets. • Butter edges of filo, fold in sides, butter the fold and roll up jelly-roll style. • Place on clean sheet of foil and roll up. Can be frozen until needed. Makes 5 to 6 rolls. • Spray baking sheet (or foil-lined baking sheet) with cooking spray. • Slice/score approximately 1½ inches to 2½ inches (this must be done before baking or you will have a mess trying to cut it after it has been baked). • Bake at 375° for 45 minutes or until golden brown

Our Good Day "Appsgiving" continues, Tina has made butternut squash bruschetta for everyone to try! RECIPE 1 small butternut squash, peeled and deseeded, medium diced 2 tablespoons olive oil ½ bunch fresh sage, leaves picked 2 tablespoons salted butter 1 teaspoon aci pul biber or crushed red pepper 1 tablespoon maple sugar 1 teaspoon kosher salt ¼ teaspoon freshly ground black pepper 1 cup whole walnuts, toasted 2 balls burrata, sliced into rounds 1 baguette, sliced into ¼ inch rounds Preheat the oven to 400 degrees, take diced butternut squash and add to a mixing bowl, toss with olive oil, pul biber, maple sugar, kosher salt, and black pepper. On a parchment lined sheet tray, add the seasoned squash in an even layer and place into the oven. Roast until evenly browned and cooked through, about 18-20 minutes. In a saute pan, add the butter and heat until bubbling then add the sage. Remove crispy sage leaves from the pan and allow the butter to caramelize and then turn off heat. Slice baguette into rounds and lay onto a parchment lined baking sheet, brush with half the brown butter, season with salt and pepper and place into the oven. Cook until golden brown for about 6-8 minutes. To assemble, lay out crostinis and top with slices of burrata and sprinkle salt over the top of each piece. Spoon 1-1 ½ tablespoons of roasted squash on top and press a bit so they stick into the burrata. Drizzle the tops of each with the browned butter and then top each with a crispy sage leaf.
