Grilled Fingerling Potato Salad with Blue Cheese

Cook Time: 10 minutes -15 minutes
- 1 ½ lb fingerling potatoes
- ¼ lb gorgonzola dolce gelmini cheese, crumbled **Available in the cheese department
- 1- 1 ½ cups mayonnaise
- ¼ red onion
- 2 tbsp chives
- 1/3 lb Market District ™ bacon, cooked and crumbled
- ¼ cup Market District ™ olive oil
- Salt and Pepper to taste
Place the potatoes in a pot and cover with water. Bring to a simmer and cook for 5-7 minutes. Just until slightly tender but still firm. Drain and let cool slightly. Cut the potatoes in half length-wise and toss the potatoes and onions with the olive oil, salt and pepper to taste. Place the potatoes and onions on a pre-heated grill over high heat. Cook until they have nice grill marks. Place the potatoes in a bowl. Chop the onions roughly and add to the bowl. Add the remaining ingredients and toss lightly just to coat. Serve warm.
