So, he has plenty of recipes to get your cooking started. Here are a few basics.

Vegetarian Chili

Makes 4 servings.

Ingredients:

2 tablespoons olive oil
1 medium onion, chopped
8 baby carrots, chopped
2 cloves garlic, minced
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon thyme
1 (19-ounce) can red kidney beans, drained
1 (8-ounce) can corn, drained
1 teaspoon salt
1 cup prepared, meatless tomato sauce
1/2 cup water
Hot sauce, to taste
1 cup dry rice, cooked

Method:

  • Heat the olive oil in 3.5-quart chicken fryer over medium heat. Add the onion, carrot, garlic, chili powder, cumin, paprika, and thyme. Saute 3-minutes.
  • Add the remaining ingredients, except the cooked rice. Stir well. Bring to a boil. Lower heat to a simmer and cook covered 15 minutes, stirring periodically.
  • Serve over cooked rice.

Pasta e Piselli (Pasta and Peas)

Makes 4 servings.

Ingredients:

3 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1 cup crushed or diced canned tomatoes
2 sprigs fresh basil (optional)
1 teaspoon salt
1/2 teaspoon ground black pepper
1 (15 ounce) can green peas, drained
1 pound elbow or small shell pasta, cooked al dente
1 1/4 cups water reserved from cooking pasta
Freshly grated Parmesan cheese

Method:

  • Heat the olive oil first in 3-quart stir-fry pan over medium heat. Add onion and saute 5 minutes, or until soft. Do not let brown. Add tomatoes, basil, salt and pepper. Lower heat and simmer, uncovered, 5 to 8 minutes or until thick.
  • Add the peas, cooked pasta, and reserve pasta water. Toss well.
  • Serve with grated Parmesan cheese on side.

Dinnertime Salad

Makes 1 serving.

Ingredients:

1 (6-ounce) can chunk white tuna, drained
1 (8-ounce) can cut green beans, drained
1/3 cup Thousand Island salad dressing
2 cups prewashed mixed salad greens

Method:
Combine tuna, green beans, and salad dressing in 2-quart saucepan. Add the salad greens and toss well.

Strawberry Shortcake
Makes one 8-inch cake.

Ingredients:

1 (9 or 10 ounce) box yellow cake mix
1/4 cup strawberry jam, stirred well with a spoon until smooth

Method:

  • Preheat oven 325-degrees. Lightly grease and flour 8-inch skillet/baking pan.
  • Prepare cake mix according to package instructions. Pour half the batter in the pan. Drop teaspoons of jam on top. Cover with the remaining batter. Swirl the jam into the batter with a rubber spatula.
  • Bake for 25 to 35 minutes. Cake is done if it springs back when pressed lightly in the center. Cool 10 minutes before removing from pan.
