"Palm" Restaurants Dress For Success

"The Palm" has grown to almost 30 steakhouses in the United States alone in its 81 year history, and now is helping to "give back" by aiding "Dress For Success," which raises money to make the dream of a career and better life a reality for many disadvantaged women.

Palm corporate executive chef Tony Tammero filled in The Early Show viewers about the partnership Monday -- and fed audience members steak and eggs all morning!

Tammero was also kind enough to dish out recipes for some of the items on its special Dress For Success menu.

Dress For Success seeks to provide professional attire, a network of support, and career development tools to help low-income women thrive in work and in life.

The Early Show is staging a week-long clothing drive on its plaza to pitch in.

Folks can drop items off from 7 o'clock to 10 o'clock every morning through Saturday, Sept. 29.

Dress for Success accepts new or nearly-new and cleaned:
--Coordinated, contemporary, interview-appropriate skirt and pant suits
--Beautiful, crisp blouses
--Gorgeous blazers and jackets
--Professional shoes

The Palm is running a promotion this month and next in its restaurants across the country to raise money for the charity, with part of the proceeds from select menu items going to it.

TAMMERO'S RECIPES

Tequila Shrimp Salad

Four 11/13 shrimp butterfly and marinated
2 oz iceberg lettuce
2 oz romaine lettuce
1/4 cup black bean and corn salsa
2 oz chopped tomato
1/2 roasted peppers diced
5 orange wedges
1/2 avocado sliced
1 red corn tortilla sliced into 5 strips and fried
1 cilantro sprig
2 oz cilantro lime vinaigrette

Tequila Marinade

6 limes juiced
4 tbsp chopped cilantro
1 cup blended oil
1/4 cup tequila
8 garlic cloves- smashed
1 tbsp ground cumin
1 tbsp orange marmalade
2 tsp ground black pepper
1 small jalapeno- diced
pinch of salt

Mix well with shrimp and let sit for 2-3 hours.

Cilantro Lime Vinaigrette

1/2 cup balsamic vinegar
3 tbsp finely chopped cilantro
2 ea lime juice
2 tbsp honey
1 cup blended oil
salt to taste

Combine all ingredients except for the oil and salt. Gradually add the oil and seasoning.

Black Bean Corn Salsa

1 cup black beans soaked over night
2 cups frozen corn
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp cayenne
1 red pepper diced
1/2 red onion diced
1/2 bunch fresh cilantro leaves minced
3 scallions chopped 1 lime juiced salt/pepper
1 tsp. blended oil

After soaking beans overnight drain and put in 4-quart saucepot and fill with water. Cook until fork tender. Remove from heat, strain and cool. Sauté corn in blended oil, salt and pepper. Let cool. Mix all ingredients together once they have cooled down. Check seasoning.

Salad Procedure: Marinate the shrimp in the marinade for at least 1 hour prior to serving and grill until cooked through. Finish in oven if necessary. In a bowl, add iceberg, romaine, black bean salsa, tomatoes, roasted pepper and vinaigrette. Place in a bowl and top with the avocado and fried tortilla and a sprig of cilantro. Place 4 grilled shrimp (tails removed) and orange wedges around the salad.

Steakhouse Chop Salad

(cooked at The Palm with Prime-Aged marinated skirt steak)

6 oz marinated skirt steak
3 oz romaine lettuce
1/4 head of iceberg lettuce
4 oz tomato, chopped
1/2 each roasted red pepper
1 tbsp onions, chopped
2 ea hearts of palm

Marinade Ingredients:

For 1 pound skirt steak
1/2 cup Barbecue sauce
1/2 cup root beer
1/2 cup coke
1 tbsp olive oil
1 tsp garlic (chopped)
Salt and pepper
1/4 cup crumbled blue cheese
1 tbsp bacon bits
1 ea hard boiled egg
1 tbsp onions (fried for garnish)

Marinade Procedure: Combine all marinade ingredients in a bowl, season well with salt and pepper and blend together. Clean the skirt steak, removing the fat on both sides of the steak. In a pan, pour marinade over the steaks and refrigerate for 3-4 hours. After 3-4 hours, remove from the steaks from the marinade and hold until needed.

Salad Procedure: Chop all the ingredients together except for the blue cheese and bacon. Toss items together in a bowl. Top with blue cheese and bacon. Cook steak to liking and slice against the grain and place over top of salad. Garnish with hard boiled egg cut into quarters. Top with fried onions.

Marinade time: 3-4 hours
Salad Prep: 10-15 minutes
