Demand Jumps For Rabbit Meat

Maybe Elmer Fudd was right. Producers report a growing demand for wabbit.

Custom processors in Iowa say they are having a hard time keeping enough rabbit meat on hand. Retailers say they could sell more rabbit if they could get it.

Rising demand might surprise people, because there aren't a lot of ads for rabbit. Unlike big industries such as beef and pork, the rabbit market is vewwy, vewwy quiet. But processors say rabbit is a popular specialty meat. Industry experts say it's relatively inexpensive -- and healthy, because it is low in fat.

With demand up, some growers are trying to increase supply. One company hopes to build the largest rabbitry in Iowa. Of course, first they have to get the bugs out.
