At first when I saw all the hard winter squashes in the grocery store I felt really sad. This is it! Winter is coming! Then I remembered: Winter squash is delicious and when life gives you lemons make lemonade. Or as it will be known for today, when life gives you autumn make hard-skinned squash recipes. Don't forget that all those bright orange squashes are really good for you, they're loaded with Vitamin A and B vitamins, and brimming with good antioxidants and phytonutrients. So eat them! Like how? Like this!
Soy Sauce Butter Oven-Roast Squash
I do one variation or another on soy-sauce and butter and a third thing on kabocha sauce all winter. This recipe shows you how to do it adding a little of the Japanese chili pepper blend togarashi, but you can use plain old chili powder, pumpkin pie spice, or just about anything else that occurs to you. Oven roasted squash for the win!
Martha's Butternut Squash Pie
Why are we always putting pumpkins in pies, but never squash? Martha is more or less always right, which is more or less why we hate her, and here she is right again: Ginger snaps are a perfect start to a butternut squash pie, which is itself a perfect thing to make.
Food 52's Caramelized Butternut Squash Wedges With A Sage Hazlenut Pesto
All you are doing here is cutting butternut squash into crescents, laying them in a roasting pan, and, when they're roasted, tossing them with a little pesto you made from sage and hazelnuts. This is delicious! It's got all the Thanksgiving flavors, and goes beautifully with pork, with chicken, with all those things you want to cook now that it's time to turn on the oven.
Fine Cooking's Hubbard Squash Soup
I'm going to say something frightening right now: You could make squash soup this weekend and freeze it and have it at Thanksgiving. I know! It's too soon. Well for most of us. But I know some of you are already cooking for the Superbowl Sunday of food, and if you want to pre-game, nothing freezes better than squash soup. This one from Fine Cooking is a beauty, very subtle, but good.
Bon Appetit's Pork Stew With Chiles
Spice goes so well with squash, and not just pie spice, but the rainbow of hot spices too. You will believe this when you fill up a Crockpot with a lot of squash and some pork.
