A search for the best sausage options span from Venice to downtown. This list hails from the world of Austrian cuisine in Beverly Hills to Thai street food in Grand Central Market, then on to a haven for Texas BBQ on La Brea and a butcher shop in West Hollywood. These LA businesses explore the cultural and culinary traditions of sausage making and eating.

Several LA chefs include sausage entrees on their menu. Currently Jon Shook and Vinny Dotolo serve a shrimp and rabbit sausage spring roll with mizuna and green curry at Animal. Thomas Keller includes the classic Boudin Blanc white sausage on his Bouchon menu in Beverly Hills. Seoul Sausage in West LA by Sawtelle Boulevard is a popular destination for galbi sausage with kimchi relish and and spicy pork sausages with apple cabbage slaw. The possibilities are endless and hard to narrow down.

Let's start with a must-visit butcher shop on Fairfax Avenue in West Hollywood. LA's superstar butchers Erika Nakamura and Amelia Posada make some of the best sausages in the city. Don't miss the classic sweet Italian or maple breakfast, and be sure to try their innovative recipes like the pork kimchi, lamb baharat, and bacon cheeseburger. Best of all, Nakamura and Posada fill their shop with the best local, pastured, organic meats and will offer up advice for cooking everything they sell. The Austrian restaurant run by an incredibly talented and impossibly tall young chef Bernhard Mairinger serves some of the best sausage in the city. At BierBeisl the sausage menu is truly a thing of beauty. Mairinger trusts Continental Sausage to make the kinds of sausages he ate growing up in Austria. They supply BierBeisl with classic bratwurst, weisswurst, weiner, and bier cabanossi as well as the unique thin debreziner and Swiss cheese-infused kasekrainer. The décor, Austrian beer and wine list, in-house smoked char, and perfectly cooked schnitzel all add to the feeling that you are tasting the authentic flavors of Austria.

Bludso's, LA's newest BBQ joint on La Brea, features one of the best sausages in the city. The all-beef, locally-made hot links come a la carte or as part of "The Tray," filled with chicken, brisket, ribs, rib tips, and pulled pork alongside mac and cheese, coleslaw, potato salad, baked beans, and collard greens. Be sure to order a pitcher of beer or Julep on Tap and try the cornbread. The smoky hot links make great leftovers, too. Try grilling them up the next morning with scrambled eggs.

Grand Central Market has been a bustle of activity since 1917. This year, several new businesses will be joining the vendors selling meats poultry, seafood, produce, cooked foods, and beverages. Soon Valerie Confections and G&B Coffee will be setting up shop in the historic marketplace. Newly-opened Sticky Rice serves simple Thai dishes from a counter in the middle of the market. Their menu of chicken and rice, curries, and soup is inspired by the street food of Thailand. The spicy Thai sausages served with raw vegetables, sliced ginger, and a basket of sticky rice will make you want to book a ticket to Bangkok. The sausages are made by a local woman who is so in demand, they do not want to share her name to make sure they will be the ones to continue to be able to serve her amazing spicy sausages.

This is place to meet a group for sausage, Belgian fries, and a beer. The menu features classic bratwurst, hot Italian, and kielbasas, as well as sausages made of crocodile pork, rattlesnake rabbit, and pheasant.
