Chef Adam Pechal's Grilled Brussels Sprouts

2 lbs Brussels Sprouts
1 TBS olive oil for grilling
half lb cooked bacon (fat reserved)
4oz Blue Cheese
Juice of 1 lemon
2 TBS sherry vinegar
2 TBS olive oil
Salt & Pepper to taste
1 TBS Bacon fat (optional)

Cut brussel sprouts in half and coat with olive oil then grill them over high heat for 5-7 minutes. You want them to be a little charred.

Toss all ingredients together and serve.
