Charles Carroll of Carrollton, Maryland, is one of the most famous Founding Fathers. The Irish American farmer was originally kept from public office as he was Catholic, but that didn't stop him from fighting for independence under a pen name in the Maryland Gazette. He later served in the Continental Congress and became the last living signatory on the Declaration of Independence.
