Featured Recipe: SPICY RAPINI AND SAUSAGE PIZZA
Start to finish: 30 minutes
Servings: 4
1 bunch rapini, washed and chopped
¼ cup olive oil
2 cloves garlic, thinly sliced
½ teaspoon ground chili
Four 6 ounce prepared pizza dough
Sea salt
½ red onion, thinly sliced
2 cups ground pork sausage, cooked
½ pound fresh mozzarella cheese
4 eggs, cracked into 4 separate cups
1 lemon, cut in half

Heat the oven to 400 F.
Place pizza stone in the middle of the oven on the center rack.

Using a sharp knife, roughly chop the rapini until you arrive at the stem. Next, thinly slice the rapini stems, so that they cook at the same rate as the leaves.

In a large skillet over high heat, add the olive oil, garlic and rapini. Cook until tender, without browning the garlic. Add the chili, mix, and remove from heat. Cool the rapini on a tray.

Sprinkle your workspace with flour. Using a rolling pin or your hands, roll or stretch the dough in a circular fashion, being careful to keep the dough the same thickness throughout. Dough can be as thick or thin as you would like.

Working quickly, brush the dough with olive oil and season with sea salt. Place the red onions on top of the dough, covering the entire area. Next add the rapini, sausage and mozzarella cheese, leaving a small well in the center for your egg.

Slide pizza onto preheated pizza stone inside the oven. Pour the egg into the well. Bake for approximately 10-15 minutes, until desired doneness and the egg is cooked, but the yolk is still runny.

Remove the pizza from the oven and place on a plate or other hard surface. Using a pizza cutter, cut the pizza 4 times, twice horizontally and twice vertically, around the egg, leaving it untouched.

Add a squeeze of lemon, a drizzle of olive oil, and pierce the egg yolk just before serving.
