Authors Re-Do Traditional Cookbook With Vegan Recipes
By John Ostapkovich
PHILADELPHIA (CBS) – The name Betty Crocker is synonymous with American comfort food but it's hardly fare for vegans, until now.
Scarred by watching the lobster-cooking scene in the movie Julie and Julia, Annie and Dan Shannon set out to re-do a traditional cookbook in vegan terms.
They settled on The Betty Crocker Cookbook and the result, Betty Goes Vegan: 500 Classic Recipes for the Modern Family, is out now and they promise there's no steep learning or shopping curve.
"A lot of these products, the vegan products - like the mock meats and non-dairy cheeses - you can find them at most grocery stores," says Annie.
"And it's truly not any more difficult to prepare a vegetarian or vegan version of a dish. Sometimes the preparation is a little different," explains Dan.
Recipes cover breakfast, lunch, dinner and baked goods. The book is also available in an e-version.
