Delicious Dishes Using Five Ingredients, Tops

NEW YORK -- Who says cooking has to be complicated?

Not Claire Robinson. She makes amazing dishes using five ingredients, at most.

Claire believes a great recipe doesn't have to be long and complicated, and should be easy and user-friendly. She feels you can make something incredible using no more than five ingredients, and proves it in her cookbook, "Five Ingredient Fix," which was inspired by her Food Network show of the same name.

"Early Show" Recipes Galore!

On "The Early Show" Friday, Claire made a simple roasted grape tomato recipe with three ingredients, then used them to make four other dishes with only two additional ingredients each.

RECIPES

Roasted Grape Tomatoes

INGREDIENTS:
4 cups grape tomatoes
3 tablespoons extra virgin olive oil
2 teaspoon course kosher salt
1 teaspoon freshly ground black pepper
3 garlic cloves, peeled

METHOD:
Preheat oven to 400 degrees. Drizzle 3 tablespoons olive oil over the grape tomatoes and 3 garlic cloves, and sprinkle with salt, pepper.

Pour the tomatoes and 3 garlic cloves in a 9x13 glass-baking dish, ensuring they are in just one layer. Roast for 20 minutes, and then stir. Add 2 to 3 tablespoons of hot water if too dry in appearance. Return to the oven and cook for 20 to 30 more minutes. When ready, the tomatoes will have begun to shrivel and the liquid in the dish should have thickened. Serve hot from oven as an amazing side dish to my blue cheese butter stuffed filets. Yummy! (Note: If tomatoes are not in season, add a pinch of sugar to help bring out that sweetness as in an in-season grape tomato.)

Roasted Grape Tomato and Ricotta Bruschetta

INGREDIENTS:
1 baguette
olive oil
fresh ricotta
roasted grape tomatoes (from recipe)

METHOD:
Cut baguette into even slices about an inch thick. Brush with olive oil and grill or broil until toasted. Top with about a tablespoon of fresh ricotta. Sprinkle with a good finishing salt, such as a gray salt and pile high with roasted tomatoes as a quick appetizer or lunch.

Oven-Baked Tarragon Chicken Breasts with Roasted Tomato Sauce

INGREDIENTS:
4 skin on bone in chicken breasts
Olive oil
Salt
Pepper
1 tablespoon fresh tarragon leaves, chopped (or to taste)
roasted grape tomatoes (from recipe)

METHOD:
Place chicken in an 8x8 or 9x9 baking dish. Brush chicken breasts with olive oil and season with salt, pepper, and fresh thyme. Puree the tomatoes and all of that yummy thick cooking liquid while warm from the oven with some hot water to make juicy sauce filled with roasted tomato flavor. Then spoon over the roasted grape tomato sauce and oven bake in oven at 350 for for 30-45 min until meat is white and juices run clear. Yummy and healthy!

Roasted Grape Tomatoes Tangled in Angel Hair

INGREDIENTS:
Angel hair pasta
Roasted grape tomatoes (from recipe)
Lemon basil or regular basil

METHOD:
Cook the angel hair (box or pre-packaged fresh pasta) as per the directions on the package. Drain the pasta and add tomatoes. Grab a large handful of lemon basil leaves or regular basil leaves and cut into ribbons or add whole to the warm pasta.

Poached Egg and Roasted Grape Tomatoes on Toast

INGREDIENTS:
4 eggs
Brioche
Roasted grape tomatoes (from recipe)

Poach 4 eggs. Slice brioche into four slices to your desired thickness (about 2 inches). Toast. Top toasted brioche slices with a spoon of hot tomatoes and followed by a poached egg. Suggested to serve with my thick cut maple-roasted bacon on the side!
